Silenzi Rosso is a red wine by Pala. It is macerated at controlled temperature with the addition of selected yeasts. After the maceration, light clarifications are carried out, follows the refinement in stainless steel vats and in the bottle. The wine has a lively ruby red color with violet reflections. The aroma is intense with notes of red fruits and the taste is dry and soft with a good duration.

It can be better appreciated if consumed together with main courses and lean red meat, medium seasoned and fresh cheeses. Serve at 16/18° C.

“Morellino” is a grape that is technically a strain of Sangiovese, a “kissing cousin”. It is cultivated in the Scansano area, South of Tuscany. A legend tells that the grape was given its name because the brown hue of the grapes is similar to the color of the Marmmano horses. The grape grows with high sugar levels, producing wines rich in fruit and solid in structure. 

Morellino taste is fresh and welcoming, with enjoyable, soft, cherry/berry Sangiovese fruit. An expressive, attractive nose with black cherry, plum and black fruit aromas, along with a definite vegetal element (green peppers) and some earthy hints. It immediately tastes rich on the palate, with black cherry and berry flavor that blend into a pleasant tartness. 

Taste it combined with simple but tasty food as ham sandwich, hamburger, steak, mushrooms. It is perfect also with ragù pasta.

The land on which the vineyards rest upon have medium texture characteristics with clay-limestone prevalence; they are located at an altitude of between 200 and 260 meters above sea level, with east / south-east exposure. The silty-clay matrix of the soil determines most of the characteristics related to the chemical, physical and biological fertility. The situation regarding the fauna biodiversity of the soil is good. It has confirmed the presence of biological forms such as Diluir and Symphyla and in autumn surveys some very sensitive groups, typical of unpolluted soils as Pseudoscorpions have appeared.

The grapes of Sangiovese, Syrah and Merlot are hand-harvested when technological and phenolic maturity are reached. The refrigeration at 7°C and the cold maceration in large oak barrels allow to maintain the complexity of the aromatic compounds naturally present in grapes. Subsequently the temperature-controlled fermentation (28°C)takes place and it is followed by an aging of 10 months in large wooden casks.

The wine is kept in steel tanks for 6 months and then decanted into used oak barrels where it is left to mature for 12 months. After the ageing in barriques the wine is decanted once again into steel tanks where the two grape varieties are blended, decanted and gently filtered. The wine is then ready to be bottled and stocked for another 6 months in order to take out its best potentialities.

Il Borro Toscana Rosso IGT 2015 (75cl) – Il Borro

The bouquet is full and intense, concentrated, with notes of underbrush and with spicy scents. The taste is dry, with good body and soft tannins, a good consistency, well integrated and persistent.

The frementation takes about 22 days in the stainless-steel tanks at a temperature controlled 28°C. The last stage is alcoholic fermentation which takes around 10 days on average after which the wine is decanted in to barrels. From these older barrels the wine is siphoned in to new Allier Oak barrels, a procedure known as racking. After the malolactic fermentation the grape varieties are blended by the Vigneron, the estate wine maker. The wine is then left to mature in casks for at least 18 months after which it is filtered and bottled. The wines remain in cellars for a further 8 months for a final maturation.

The grapes are picked by hand in boxes. The thermo controlled fermentation takes a few days to extract all the polyphenolic potential of the grapes. The malolactic fermentation and the subsequent maturation are made in stainless steel tanks and big barrels. It is bottled in June after the harvest.
