The vines are situated at around 400m above sea level, on terraces that slope down to the Savuto river, surrounded by unpolluted woods. The “virgin” ecosystem and the wind that blows from the nearby Tyrrhenean Sea, safeguard the health of the vines and so minimise the use of agropharmaceuticals. Thermals from the nearby river intensify the aromas of the native cultivars. A south west exposure to evening sun slows down the ripening of the grapes. This softens the harshness that can sometimes be found in wines from the south. The grapes on each cultivar are picked by hand according to their ripeness. Each grape variety is vinified separately, and then amalgamated after the first decanting according to the size of the yield. Selection of grapes by hand, a slow maceration at controlled temperature and a light pressing all go towards preserving the character and fragrance of the ripe fruit.

Borrigiano is the first wine from Il Borro winery under the designation “Valdarno di Sopra DOC” and with the Organic certification. It is produced after years of dedication to research, experimentation and enthusiasm in creating quality wines. The grapes of Sangiovese, Syrah and Merlot are hand-harvested when technological and phenolic maturity are reached. The refrigeration at 7°C and the cold maceration in large oak barrels allow to maintain the complexity of the aromatic compounds naturally present in grapes. Subsequently the temperature-controlled fermentation (28°C)takes place and it is followed by an aging of 10 months in large wooden casks.

The wine is kept in steel tanks for 6 months and then decanted into used oak barrels where it is left to mature for 12 months. After the ageing in barriques the wine is decanted once again into steel tanks where the two grape varieties are blended, decanted and gently filtered. The wine is then ready to be bottled and stocked for another 6 months in order to take out its best potentialities.

Il Borro Toscana Rosso IGT 2015 (75cl) – Il Borro

The bouquet is full and intense, concentrated, with notes of underbrush and with spicy scents. The taste is dry, with good body and soft tannins, a good consistency, well integrated and persistent.

The frementation takes about 22 days in the stainless-steel tanks at a temperature controlled 28°C. The last stage is alcoholic fermentation which takes around 10 days on average after which the wine is decanted in to barrels. From these older barrels the wine is siphoned in to new Allier Oak barrels, a procedure known as racking. After the malolactic fermentation the grape varieties are blended by the Vigneron, the estate wine maker. The wine is then left to mature in casks for at least 18 months after which it is filtered and bottled. The wines remain in cellars for a further 8 months for a final maturation.

Syrah (70%) and Nero d’Avola (30%), the two indigenous Sicilian red grapes, come together in this SYNE, part of the Pietro line, in honour to Nino’s father. Since their similarities they do no curse one with the other, on the contrary, they blend to unite the qualities of both, one more fresh and red fruit oriented, the other more reminding of ripe black fruit. The blend results in a wider taste, more complex and more exciting. The complexity is also due to the aging of half of the volume during almost two years in medium toasted American barrels. The already rich base now is agreeably loaded with more vanilla and wood tannins, which give the wine also a long aging potential (5-8 years).

Nero d'Avola IGP Terre Siciliane 2016 (75cl) - Nino Gandolfo

It is fruity, strongly reminiscent of ripe red berry fruit, black cherry, black plum, violet, liquorice, tobacco and (Chile) pepper flavours. Dry With smooth tannins, quite strong, but not sharp at all, in good balance with the alcohol. It can age until 4-5 years.

Nero d\'Avola is the most important red wine grape in Sicily and is one of Italy\'s most important indigenous varieties. It is named after Avola in the south-east of Sicily; the vine likes hot and arid climates. A well-made Nero has good dark concentration. Because of its wild character some colleagues blend their Nero d’Avola with Frappato, Nerello Mascalese, Cabernet Sauvignon or Merlot, to obtain less acidity, more elegance, more oral fragrance and softer fruit. This young NE however is Nero d’Avola in purity.

Chianti Superiore DOCG 2013 - Usiglian del Vescovo (75cl): A Chianti Superiore with an intense and fruity aroma produced from Sangiovese grapes aged for 9 months in strictly Italian oak barrels. Bright red colour, on the nose it is intense with notes of red and purple fruits. On the palate it has a soft entry while the vibrant freshness makes the finish fruity and extremely pleasant. Montepulciano d\'Abruzzo DOC 2014 - Fontefico (75cl): It is a wine with strong fruity notes of raspberries and blackberries, with balsamic vegetal notes that contribute to increase its persistence in tasting. The aging of this wine in wood brings out a pleasant spice to the taste, with hints of licorice and a slight bitter tendency. The characteristics of the wine tasting contribute to increase the particular taste of lamb, mitigating the sweet tendency through the good acidity of this Montepulciano and its spiciness, with amaricant notes. Valpolicella Superiore DOC - La Collina dei Ciliegi (75cl): Although the Superiore designation requires that the grapes that go into this wine are harvested at a slightly higher sugar level than standard Valpolicella—thus producing a wine of potential higher alcohol—this Valpolicella is a soft, supple example of this classic wine. Ruby red in color, this Valpolicella Superiore offers fleshy aromas of wild berries, black currants, black cherries, and spices, with hints of chocolate. On the palate, the wine is dry and robust with velvety texture.

The first harvest happens in the first ten days of December and it is manual. After that, the maceration is executed in a slow and controlled temperature with regular cycles. The fermentation takes place by spring. After the fermentation, the wine is put in oak barrels for 20 months. The bottles are stored in dark and cool cellars for at least 9 months before commercial release.

Terre di Fiori Morellino di Scansano DOCG 2015 (75cl) - Tenute Costa

The vinification is carried out with 10-12 days of maceration and fermentation in steel tanks, with gentle punch-downs and brief pumpovers. Malolactic fermentation occurs in large cement tanks, and it is aged for 6 months in the bottles before it is ready for sale.

The grapes are picked by hand in boxes. The thermo controlled fermentation takes a few days to extract all the polyphenolic potential of the grapes. The malolactic fermentation and the subsequent maturation are made in stainless steel tanks and big barrels. It is bottled in June after the harvest.
